Chihuahua Typical Meals: The Top 5 Dishes

The typical foods of Chihuahua are based on the abundant beef and on their dehydrated fruits and vegetables. Among these dishes stand out some like the dialada or the red chile with dried meat.

As for the fish, there are some elaborate meals with which they are fished in the prey. Chihuahua is one of the Mexican States bordering the United States of America.

Its capital has the same name, while its most populated city is Ciudad Juárez.

It is very marked by the presence of the desert, which occupies a third of the territory. For this reason, it is the one with the lowest population density of the whole country.

The gastronomy of the State is marked by the abundance of cattle raising in the whole area. Several species are raised that offer high quality meats, such as the white face or the Angus.

The other characteristic that has marked its plates is the custom to desecrate much of the harvest of fruit, grains or even part of the meat.

This is due to the meteorological conditions, with very extreme climates that forced to look for ways of conservation and storage.

1- Machaca

The base of this dish, the dried meat, comes from the need that the inhabitants of the zone had to dry the meat to lengthen the conservation of the same, eating it as it was when they needed it.

According to an oral tradition, the crush was born when some miners, tired of eating the meat alone, asked that they vary the plate a little. The cook took advantage of what she had: some chiles, onion, tomato and eggs.

The dish is usually eaten as breakfast and consists of softening all the ingredients and, when they are prepared, add the eggs until they are made to the taste of each one.

2- Dialed

Livestock tradition is the origin of this dish. Not only for the main ingredient, beef, but also because the vessel in which it is traditionally made is a plow disc to which are added legs.

It is said that it was the workers who, being so long in the field, had to start cooking with what they had at hand.

Apart from beef, the dial carries pork, as well as sausage, bacon and ham. As for vegetables, include onion, peppers and jalapeno peppers. All of them are stung and added to the fire.

3- Red colorado with dried meat

The red chile with dried meat is a dish that, like others, shows the importance of the beef and its preparation in the form of dried in the State.

The origin of this recipe, according to tradition, we found during the Mexican revolution, when in Ciudad Juárez an establishment began to prepare the tortillas of greater size, to avoid that the food that surrounded would cool down.

It is usually taken in burritos and used chile anaheim or guajillo. The meat is deshebra and it is united to some potatoes and to the sauce prepared with the chili and garlic.

4- Bear broth

Although the gastronomy of the State is very marked by the cattle tradition, there are also some dishes made with fish, like this broth of bear.

The origin of this name seems to come from an expression used by workers who built a dam and who, each day, had to eat the fish that was collected there.

So tired were they calling it"hateful broth". After a few years, the name was shortened, until the current one.

The food is prepared with catfish, making a broth that also includes broad chile, tomato, carrot, thyme or marjoram.

5- Calabacita with cheese

Not only dry meats are used in the gastronomy of Chihuahua. It was also common for fruits to undergo this process in order to lengthen their conservation, since the climate did not allow for many crops each year.

Apart, among other sweets, highlight the apricots of zucchini with cheese. Small pumpkins are needed to make them, which are emptied carefully.

Later they are filled with the pulp, cheese, beaten egg and crushed bread, all refried. Finally put everything in the oven until you are ready.
